Ingredients (for 2 people)

- 150g dried vermicelli (or noodles)
- 1 cucumber (medium size, cut into thin strips)
- 1 small carrot (cut into thin strips, optional)
- 2 cloves of garlic (chopped)
- A little coriander (chopped, optional)
- An appropriate amount of crushed peanuts or sesame seeds (for sprinkling on noodles)
Ingredients for sauce:
- 2 tablespoons of sesame paste (about 30g)
- 2 tablespoons of light soy sauce (about 30ml)
- 1 tablespoon of aged vinegar (about 15ml)
- 1 teaspoon of sugar (about 5g)
- 1 tablespoon of chili oil (adjust according to taste)
- 3-4 tablespoons of water (to dilute sesame paste)
- 1 teaspoon of cooked sesame seeds (for decoration)

Production steps

1. Cook the noodles: Bring water to a boil in a pan, add the noodles, stir gently with chopsticks, and cook for about 4-5 minutes according to the instructions on the package until just cooked (the noodles are elastic and not sticky).
2. Rinse: Take out the cooked noodles quickly and rinse them thoroughly with cold water until the noodles are completely cool, so that the noodles taste smoother and will not stick together. Drain the water and set aside.
3. Prepare the sauce: Take a small bowl, add sesame paste, light soy sauce, aged vinegar, sugar, and chili oil, and stir evenly with chopsticks or a small spoon. Then, add clean water several times to make a thick and moderate sauce with a smooth taste without lumps.
4. Mix the noodles: Put the cooled and drained noodles into a large bowl, pour in the prepared sauce, and mix thoroughly with chopsticks to coat each noodle evenly with the sauce.
5. Add the ingredients: Add the shredded cucumber and carrot, sprinkle with minced garlic and chopped coriander, and continue to mix gently.
6. Plate and garnish: Place the mixed cold noodles on a plate, sprinkle with crushed peanuts or cooked sesame seeds, and finally add a little chili oil to enhance the flavor according to personal taste.

Tips

- Thin noodles or dried noodles are more suitable for cold noodles, which have a smoother taste.
- It is better to use ice water when taking a shower, which can make the noodles more chewy and refreshing.
- If the sesame paste is too thick, you can use a small amount of warm water to dilute it first, and then add other seasonings.
- If you like a rich taste, you can add some bean sprouts, coriander, or chopped hard-boiled eggs.
- If you are afraid of trouble, you can also use commercial cold noodle sauce instead of homemade sauce.
